What is the danger?
Listeria monocytogenes is a bacterium that can cause serious illness. It is unusual among foodborne bacteria because it grows at refrigerator temperatures, so chilling does not make contaminated food safe. Symptoms can appear days or weeks after eating. Risk is highest for pregnant people, newborns, older adults, and anyone immunocompromised.
